Green Smoothies!

Several weeks ago I had surgery to remove a benign tumor from my parotid gland, and the procedure left me unable to eat fruits and vegetables.  I was about to invest in a juicer when I came across the “Blending vs. Juicing” article by Jane Lear that I shared with you last week.  Jane’s article inspired me to get a little more creative with my smoothies, and the results have been both nutritious and delicious!  Below are a few green smoothie recipes for you to try.  Trust me, even if you are a picky eater, you’ll find them yummy.  Happy Blending!

Berries ‘n’ Cream
1 cup strawberries with caps
1 banana, peeled and cut into chunks
1 cup plain yogurt
1/2 cup loosely packed flat-leaf parsley
3-4 drops stevia (optional)
6 ice cubes

Combine all ingredients in a blender and process well until smooth and creamy.  Serve chilled.  Serves 2.

Happy Road Runner
1 cup blueberries, frozen or fresh
1 banana, peeled and cut into chunks
1 cup chopped kale
1 cup coconut milk
6 ice cubes

Combine all ingredients in a blender and process until smooth and creamy.  Pour into glasses and serve chilled.  Serves 2.

Just Peachy Slushy
1 cup plain yogurt
2 peaches, seed removed, cut into chunks and frozen
1/2 cup loosely packed baby spinach
6-8 ice cubes

Place all ingredients in a blender and process until smooth and creamy.  Pour into a glass and serve chilled.  Serves 1.
